Helloooo guys! Welcome to another day of Blogmas 2018 and today we have another yummy recipe! There’s something about Christmas that just makes it all ok to eat all of the food!
This recipe is one that my mom made up and tastes so good! We always have some kind of dessert after Christmas lunch but it’s usually a Yule Log – this year we fancied a change and went for something different and I’m so excited!

Ingredients:
- 300g Biscoff biscuits
- 125g unsalted butter
- 500g cheese (mascarpone and cream cheese mix)
- 100g icing sugar
- 300ml double cream
- 1 tsp vanilla essence
Method:
- Grease a baking tin – circular works best for cheesecakes.
- Melt the butter in a pan on the hob until smooth.
- Blitz the biscuits in a blender until no large pieces remain.
- Add the butter to the biscuit crumbs and mix until coated.
- Put the base mixture into the tin and press it flat.
- Chill the base in the fridge.
- Mix the mascarpone, cream cheese, sugar and vanilla essence together in a bowl.
- Whisk the double cream and fold into the cheese mixture.
- Add the mixture on top of the base and smooth out.
- Crumble some additional biscuits onto the top for extra crunch.
- Place into the fridge to set and leave for three hours (ideally overnight) before serving.
- ENJOY!
